数ある佐伯のごまだしの中でも、ヤマジンのそれは実にユニーク。口にするとピーナッツバターのような香ばしさの後にごまの味、なのに後味スッキリ。ここまで独創的なものは見かけない。主原料の魚はカマス。味付けは醤油と白ごま、さらに米発酵の調味料を加えている点もまた独創的。魚が苦手な子どもでも魚と分からず口にできそうだ。
